Batter
Combine dry ingredients
In a large mixing bowl whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.
Whisk wet ingredients
In a separate bowl or large measuring cup whisk the buttermilk, whole milk, eggs, melted butter, and vanilla extract until smooth and slightly frothy.
Make batter
Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined; small lumps are fine. Do not overmix to keep pancakes tender. Let the batter rest for 5 minutes — this hydrates the flour and helps the baking powder/soda activate.

Prepare berries
Rinse and drain the blueberries and raspberries; pat dry gently with paper towels. If using lemon zest, stir it into the batter now. If you prefer sweeter berries, lightly toss the raspberries with the optional 1 tsp sugar.
Fold in berries
Carefully fold 3/4 of the blueberries and all of the raspberries into the batter, leaving the remaining 1/4 of blueberries to sprinkle on top of pancakes while cooking. Folding gently prevents crushing delicate raspberries and overworking the batter.
Cooking
Cook pancakes
For each pancake, scoop about 1/4 cup batter onto the hot griddle. Immediately drop 3-4 reserved blueberries onto the top of each pancake. Cook until bubbles form across the surface and the edges look set, about 2 to 3 minutes. Flip carefully and cook until the underside is golden and the pancake is cooked through, about 1.5 to 2 minutes more. Repeat, adding more oil or butter to the griddle as needed.
Keep warm
Transfer finished pancakes to a baking sheet and keep warm in a 200°F (95°C) oven while you finish cooking the remaining batter.
Serving
Stack pancakes on plates, dot with extra butter, and drizzle with maple syrup. Scatter any remaining fresh berries on top. Serve immediately.
