Base & Chips

    Preheat oven to 375°F (190°C). If chips are homemade or slightly stale, toss chips lightly with 1 tbs neutral oil and spread in a single layer on a rimmed baking sheet. Bake 4–6 minutes until crisp and warm—watch carefully so they don't burn. Transfer chips to an ovenproof platter or keep on the baking sheet for assembly.

Queso (cheese sauce)

    In a medium saucepan over medium heat, melt 2 tbs butter. Whisk in 2 tbs flour and cook 1 minute to make a roux, stirring so it doesn't brown. Gradually whisk in 1.5 cups whole milk until smooth. Bring to a gentle simmer, whisking constantly, until sauce thickens slightly (2–3 minutes). Reduce heat to low and whisk in 2 oz cream cheese until fully melted and smooth.

    Remove pan from heat. Add shredded cheeses (6 oz sharp cheddar + 4 oz Monterey Jack) in small handfuls, stirring after each addition until melted and velvety. Stir in 2 tbs chopped pickled jalapeño, 1/2 tsp ground cumin, 1/4 tsp smoked paprika, 1/2 tsp kosher salt and 1 tbs fresh lime juice. Taste and adjust salt or lime as needed. Keep queso warm over very low heat; if it thickens too much, stir in up to 1–2 tbs milk to loosen.

Pico de Gallo

    Combine 2 cups diced tomatoes, 1/2 cup finely diced white onion, 1/2 cup chopped cilantro and 1 minced seeded jalapeño in a bowl. Add 2 tbs fresh lime juice and 3/4 tsp kosher salt. Stir gently and let sit at room temperature 10–15 minutes to allow flavors to meld. Taste and adjust salt or lime.

Sour Cream & Pickled Jalapeños

    If desired, thin 3 oz sour cream with up to 1 tsp milk to reach a spoonable consistency. Place sour cream in a small bowl or transfer to a squeeze bottle for drizzling. Set aside pickled jalapeño slices for topping.

Optional Proteins (choose 1)

    8-hr Braised Mojo Pork

    If using prepared mojo pork, shred and warm 1–2 cups in a skillet over medium heat with a splash of reserved braising liquid or water until heated through (2–3 minutes). If making from scratch, braise pork shoulder low and slow until pull-apart tender before shredding.

    Herb-Marinated Chicken

    If using prepared herb-marinated chicken, slice and reheat gently in a skillet with a teaspoon oil until warmed (2–3 minutes). If raw, season chicken with herbs, grill or pan-sear over medium-high heat until internal temp reaches 165°F, then slice thinly.

    Taco-Seasoned Ground Beef

    Cook 1 lb ground beef in a skillet over medium-high heat until browned, drain excess fat, add 2–3 tbs taco seasoning and 1/4 cup water, simmer 2–3 minutes until saucy and cooked through. Use 2 cups for the nachos.

Assembly & Finish

    Arrange baked chips in an even layer on an ovenproof platter or baking sheet. Spoon warm queso over chips, focusing on areas you want the most cheese. Scatter 2 cups of your chosen warm protein evenly over the chips (if using).

    Top with 1–1.5 cups pico de gallo, dollops or drizzles of sour cream, and scatter pickled jalapeño slices to taste. Finish with 2 tbsp sliced green onion, 2 tbsp cilantro leaves and squeeze lime wedges over the top just before serving.

    Optional Reheat

    If you prefer melted cheese set into the chips and protein, place assembled nachos under a preheated broiler for 1–2 minutes until cheese bubbles—watch continuously to prevent burning—then finish with pico, sour cream and garnishes.

Serving & Notes

    Serve immediately so chips remain crisp. Provide extra pico, queso and sour cream on the side. Leftover components store separately: queso up to 3 days refrigerated (reheat gently), pico 1–2 days, proteins 3–4 days.
