Brewing Process
1. Mashing
Heat 5 gallons of water to 165°F (74°C). Add the pale malt and caramel malt, maintaining the temperature at 150-155°F (65-68°C) for 60 minutes.
2. Sparging
After mashing, sparge with enough water to collect 6.5 gallons of wort.
3. Boiling
Bring the wort to a boil. Add Cascade hops at the beginning of the boil (60 minutes). At 15 minutes remaining, add Centennial hops. At 5 minutes remaining, add Simcoe hops.
4. Cooling
Cool the wort quickly to 70°F (21°C) using a wort chiller.
5. Fermentation
Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Seal and ferment for 1-2 weeks at 68-72°F (20-22°C).
6. Bottling
When fermentation is complete, dissolve priming sugar in a small amount of boiling water and add to the beer before bottling. Bottle and cap the beer.
7. Carbonation
Let the bottles carbonate at room temperature for 1-2 weeks.
8. Enjoy
