Brewing Directions
1. Mashing
In a large brew kettle, heat 5 gallons of water to around 165°F (74°C). Add the pale malt, caramel malt, and flaked oats.
2. Boiling
Bring the wort to a boil.
3. Cooling
After the boil, cool the wort quickly using a wort chiller or an ice bath.
4. Fermentation
Pitch the yeast into the cooled wort.
5. Adding Fruits
After primary fermentation, add the guava, mango, papaya, grapefruit zest, mandarin orange zest, pineapple juice, nectarine, and plum purees.
6. Bottling
Once fermentation is complete, bottle the beer with priming sugar and allow it to carbonate for about 2 weeks.
