Marinate the Chicken
In a bowl, combine the buttermilk, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Slaw
In a separate bowl, mix the coleslaw mix, mayonnaise, apple cider vinegar, and sugar. Stir until well combined. Set aside in the refrigerator to chill.

Prepare the Breading
In a shallow dish, combine flour, cornstarch, paprika, garlic powder, salt, and black pepper.

Fry the Chicken
Heat vegetable oil in a large skillet or deep fryer over medium-high heat. Remove chicken from the marinade, allowing excess to drip off, then dredge in the flour mixture. Fry the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Toast the hamburger buns lightly. On the bottom half of the bun, place a piece of fried chicken, top with a generous amount of coleslaw and pickles, then cover with the top half of the bun.
