In a large brew kettle, add 5 gallons of water and heat to approximately 165°F. Add the chocolate wheat malt, pale malt, crystal malt, and cocoa powder to the water. Stir gently to ensure all grains are submerged.

Mash the Grains

Maintain the temperature at around 150-155°F for 60 minutes. Stir occasionally to prevent clumping.

After 60 minutes, sparge the grains with hot water (around 170°F) to extract maximum sugars.

Sparge the Grains

Bring the wort to a boil and add the Topaz hops. Boil for 60 minutes.

With 15 minutes remaining in the boil, add the Tettnang hops.

Once the boil is complete, cool the wort quickly using a wort chiller or by placing the kettle in an ice bath.

Transfer the cooled wort to a sanitized fermenter and top up with water to reach a total volume of 5 gallons.

Sprinkle the ale yeast over the surface of the wort in the fermenter and seal with an airlock.

Pitch the Yeast

Allow the beer to ferment at a consistent temperature (around 68-72°F) for 1-2 weeks, or until fermentation is complete.

Fermentation Period

Once fermentation is complete, add the natural flavoring to the beer and mix gently.

Siphon the beer into sanitized bottles, leaving about an inch of headspace. Cap the bottles securely.

Bottle the Beer

Allow the bottles to condition for an additional 1-2 weeks at room temperature before chilling and enjoying.
