Preparation of Cider Base

Prepare Apples
Wash and core the King David, Jonagold, Roxbury Russet, and Hudson Golden Gem apples. Cut them into small pieces to maximize juice extraction.

Juicing Apples
In a large juicer or cider press, extract juice from the prepared apples until you have approximately 8 cups of fresh apple juice.

Mix Cherry Juice
In a large fermentation vessel, combine the freshly extracted apple juice with 1 cup of Montmorency cherry juice.

Add Sugar
Stir in 1 cup of sugar until fully dissolved in the apple and cherry juice mixture.

Add Water
Pour in 4 cups of water to dilute the mixture slightly, ensuring a balanced flavor.

Add Yeast
Sprinkle 1 teaspoon of cider or champagne yeast over the mixture. Allow it to sit for 10-15 minutes to activate.
Fermentation Process

Initial Fermentation
Cover the fermentation vessel with a clean cloth or fermentation lid. Allow the mixture to ferment in a cool, dark place for 1-2 weeks, stirring daily.

Bottling
After fermentation is complete (bubbling has stopped), strain the cider into sanitized bottles using a funnel. Leave about an inch of headspace at the top.

Carbonation
Seal the bottles tightly and allow them to carbonate at room temperature for an additional 1-2 weeks.

Chilling and Serving
Once carbonated, refrigerate the cider for at least 24 hours before serving. Pour into glasses and enjoy!
