Heat 5 gallons of filtered water in your mash tun to about 165°F (73°C). Once heated, add the pale malt, caramel malt, and flaked oats. Stir well to ensure no dry clumps remain.

Mashing the Grains

Let the mash rest for 60 minutes at a temperature of 150°F (65°C). Stir occasionally to maintain even temperature.

Resting the Mash

After 60 minutes, drain the liquid (wort) from the mash tun into your brew kettle, sparging with additional hot water to collect about 6.5 gallons of wort.

Lautering

Bring the wort to a boil. Once boiling, add the Citra hops and boil for 15 minutes.

Boiling the Wort

At the 15-minute mark, add the Mosaic hops, Amarillo hops, and Simcoe hops. Boil for an additional 15 minutes.

Adding More Hops

After a total of 30 minutes of boiling, cool the wort quickly using a wort chiller or an ice bath to bring the temperature down to about 70°F (21°C).

Cooling the Wort

Once the wort is cooled, transfer it to a sanitized fermentation vessel. Sprinkle the New England Ale yeast over the surface of the wort.

Pitching the Yeast

Seal the fermentation vessel with an airlock and let it ferment in a cool, dark place for about 7-10 days.

Fermentation Process

After fermentation is complete, prepare your bottles and caps. Clean and sanitize them thoroughly.

Preparing for Bottling

Siphon the beer into the bottles, leaving about an inch of headspace. Cap the bottles tightly.

Bottling the Beer

Let the bottles carbonate at room temperature for about 1-2 weeks, then refrigerate before serving.
