Citra Sky Hazy IPA bursts with cloudy tropical dreams. We brew this juicy ale with Citra and Mosaic hops for a transcendent aroma and flavor full of mango, pineapple, and citrus character.

Heat 6 gallons of water to 165°F (73°C) and add the Pale Malt and Caramel Malt. Stir well to ensure all grains are saturated.

Mashing the Grains

Hold the temperature at 152°F (67°C) for 60 minutes to allow the enzymes to convert starches into sugars.

Resting the Mash

After the mash rest, sparge with hot water to collect about 6 gallons of wort.

Sparging

Bring the wort to a boil and add 2 oz of Citra hops. Boil for 60 minutes.

Boil the Wort

15 minutes before the end of the boil, add 1 oz of Mosaic hops.

Add Mosaic Hops

After the boil, cool the wort rapidly to around 68°F (20°C) using a wort chiller.

Cooling the Wort

Transfer the cooled wort to a sanitized fermenter and pitch 1 pkg of American Ale yeast.

Pitching Yeast

Seal the fermenter and let it ferment at 68°F to 72°F (20°C to 22°C) for about 14 days.

Fermentation

After primary fermentation, add 2 oz of Citra hops and 1 oz of Mosaic hops directly to the fermenter. Let it sit for another 5-7 days.

Dry Hopping

After dry hopping, prepare your bottles and priming sugar for carbonation.

Prepare for Bottling

Siphon the beer into bottles, leaving about an inch of headspace, and cap them.

Bottling

Allow bottles to carbonate at room temperature for 1-2 weeks.
