This copper hued, malt-forward amber ale honors our hometown Heisman winner and Iowa Football’s 1939 team, The “Ironmen”.

In a large pot, heat 3 gallons of filtered water to 165°F (74°C). Add the pale malt, crystal malt, and chocolate malt. Stir well to ensure all grains are wet, then maintain the temperature at 152°F (67°C) for 60 minutes.

Mash the Grains

After an hour, raise the temperature of the mash to 170°F (77°C) and sparge with 3 gallons of hot water to collect the wort in your brew kettle.

Sparging

Bring the collected wort to a boil over high heat. Once boiling, add the Cascade hops and boil for 60 minutes.

In the last 10 minutes of the boil, add the Centennial hops to the wort.

After the boil, cool the wort quickly using an immersion chiller or an ice bath until it reaches around 68°F (20°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the American Ale yeast. Seal the vessel with an airlock and ferment for 1-2 weeks at 68°F (20°C).

Fermentation

Once fermentation is complete, prepare a sugar solution (3/4 cup of corn sugar dissolved in 2 cups of boiling water) and add it to the bottling bucket.

Prepare for Bottling

Siphon the beer into the bottling bucket, then fill sanitized bottles, leaving about an inch of headspace. Cap the bottles and store them in a dark place for carbonation for 1-2 weeks.
