Beat eggs

Crack the 4 large eggs into a bowl. Add 2 tablespoons whole milk, 1 teaspoon salt and 1/2 teaspoon black pepper. Whisk vigorously until fully blended and slightly frothy. Set aside.

Cook scrambled eggs

Heat a nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt without browning. Pour in the beaten eggs. Let eggs sit undisturbed for about 10–15 seconds until the edges begin to set. Using a silicone spatula, gently push the eggs from the edges toward the center in slow folds. Continue folding every 10–15 seconds until eggs are mostly set but still slightly glossy and soft, about 2–3 minutes total. Remove from heat early — residual heat will finish them. Keep warm covered.

Mushrooms & tomatoes

Prepare pan and sauté mushrooms: While eggs are resting, heat a separate large skillet over medium-high heat. Add 1 tablespoon olive oil. When hot, add the 150 g sliced mushrooms in a single layer. Let them cook undisturbed for 2 minutes to brown, then stir. Cook for another 2–3 minutes until golden and any liquid evaporates.

Add tomatoes and seasoning: Add the 100 g halved cherry tomatoes and 1 teaspoon fresh thyme leaves to the mushrooms. Season with 1/2 teaspoon sea salt. Sauté for 2 minutes more, until tomatoes soften and begin to blister but still hold shape. Remove from heat and keep warm.

Cook bacon: In the same skillet used for mushrooms (wipe if needed), add the 100 g bacon strips and cook over medium heat until crisp to your liking, about 6–8 minutes, turning occasionally. Transfer bacon to a paper towel-lined plate to drain. Reserve a little bacon fat in the pan for flavor.

Cook Salsiccia: Heat a separate small skillet over medium heat and add 1 teaspoon neutral oil. Add 2 Salsiccia sausages whole. Cook, turning every 2–3 minutes, until browned on all sides and cooked through (internal temperature 70–75°C / 160–165°F), about 10–12 minutes depending on thickness. Alternatively slice sausages in half lengthwise for faster cooking (6–8 minutes). When cooked, transfer to a board and slice into 1–1.5 cm rounds or leave whole as preferred.

To serve

Warm focaccini and assemble: While meats finish, warm 2 individual focaccini in a 180°C (350°F) oven for 4–6 minutes or toast lightly in a pan with 1 tablespoon butter until warmed and slightly crisp.

Plate: On each plate place a focaccino. Spoon a portion of the soft scrambled eggs onto the focaccino or beside it. Arrange sautéed mushrooms and blistered cherry tomatoes next to the eggs. Place the sliced or whole Salsiccia and crispy bacon alongside. Sprinkle 1 tablespoon chopped parsley over the eggs and mushrooms for freshness.

Finish and serve: Offer extra salt and pepper to taste. Serve immediately while eggs are soft and meats are hot.
