Scrambled eggs
Cook
Heat a nonstick skillet over low–medium heat. Add 1 tbsp unsalted butter and let it melt, swirling to coat. Pour in the egg mixture. Let sit undisturbed for 10–15 seconds until edges begin to set, then gently stir with a silicone spatula, pushing cooked egg from edges to center. Continue cooking slowly, folding rather than stirring vigorously, until eggs are mostly set but still soft and slightly glossy (about 2–3 minutes). Remove from heat a little early — they’ll finish cooking from residual heat. Stir in chopped chives.
Avocado
Halve and pit the avocado. Scoop flesh into a bowl and mash lightly with a fork leaving some chunks for texture. Stir in the lemon juice, sea salt and red pepper flakes (if using). Taste and adjust salt/lemon to preference.
Pickle sauce
Combine the chopped dill pickles, mayonnaise, Greek yogurt, Dijon mustard, lemon juice, honey and black pepper in a small bowl. Mix until smooth but with visible pickle pieces. Taste and adjust acidity or sweetness: add a few drops more lemon or a pinch more honey if desired.
Assembly & finish
Scatter microgreens or arugula over the eggs. Drizzle each toast with a small amount of extra virgin olive oil (about 1/4 tsp each) and finish with flaky sea salt to taste. If desired, sprinkle a pinch more red pepper flakes or cracked black pepper.
Serve immediately while the toast is warm and the eggs are still soft.
