Prepare ingredients

If using egg white, separate one fresh egg and reserve the white. Measure 2 oz whiskey, 3 tsp fresh lemon juice (about 3/4 oz), and 2 tsp simple syrup (about 1/3 oz).

Dry shake (if using egg white)

Add whiskey, lemon juice, simple syrup, and the egg white to a cocktail shaker. Seal and shake vigorously without ice for 15–20 seconds to emulsify and create foam.

Wet shake

Add a generous handful of ice to the shaker. Seal and shake hard for 10–15 seconds until the shaker is cold to the touch and the mixture is well chilled and slightly diluted.

Strain

Double-strain (through the shaker's strainer and a fine mesh strainer if available) into a rocks glass filled with fresh ice. If you prefer a 'straight up' presentation, strain into a chilled coupe glass without ice.

Garnish & Serve

Garnish with one maraschino cherry and a lemon wheel or twist. Serve immediately.
