Prepare and chill
Chill a flute or coupe glass in the freezer or by filling it with ice water while you build the cocktail.
Shake base
Add 1.5 oz gin, 0.75 oz freshly squeezed lemon juice, 0.5 oz simple syrup and ice (about 6 cubes) to a cocktail shaker. Secure the lid and shake vigorously for 10–15 seconds until well chilled and slightly frothy.
Strain
Discard the ice or water from the chilled glass. Double-strain the shaken mixture into the chilled flute or coupe using a Hawthorne strainer and a fine mesh strainer to remove ice shards and pulp.
Top with sparkling wine
Carefully top the cocktail with about 3 oz of chilled sparkling wine (Champagne or a dry sparkling wine). Pour slowly to preserve bubbles and avoid an overflow; gentle stirring is optional but usually unnecessary.
