Sweet Tea Smoked Chicken
Marinate the chicken breasts in sweet tea for at least 2 hours or overnight in the refrigerator. Preheat a smoker to 225°F (107°C) and smoke the chicken for about 1.5 hours or until the internal temperature reaches 165°F (75°C). Remove from the smoker and let it rest before slicing.
Cook the Bacon
In a skillet over medium heat, cook the applewood bacon until crispy. Remove the bacon and place it on paper towels to drain excess grease. Crumble when cool.
Prepare the Salad
In a large bowl, combine the spinach leaves, spiced pecans, crumbled bacon, and Texas feta cheese.
Assemble the Salad
Top the spinach salad with sliced sweet tea smoked chicken, sunny side up eggs, and drizzle with Steen's cane vinaigrette (made by mixing Steen's cane syrup and olive oil).
