Prep and assemble
Bring bread, turkey and cheese to room temperature (5 minutes) if they are chilled. Spread 1 tablespoon of mayonnaise evenly on one side of one sourdough slice. On the other slice, spread the softened butter thinly — this will be the exterior that gets toasted.

Layer sandwich
On the mayo-spread slice, arrange the 3 oz of sliced roasted turkey in an even layer. Top turkey with the slice of sharp cheddar. Season the cheese lightly with a pinch of black pepper. Close the sandwich with the buttered sourdough slice, butter side facing out.

Toast/grill
Heat a skillet over medium heat. Place the sandwich in the skillet and press gently with a spatula. Cook 2–3 minutes until the bottom is golden brown. Flip and cook another 2–3 minutes until the other side is golden and the cheddar is melted. If you prefer, place under a preheated 350°F (175°C) oven broiler for 1–2 minutes per side on a sheet pan to melt the cheese — watch carefully to avoid burning.

Rest and slice
Transfer the sandwich to a cutting board and let rest 1 minute. Slice the sandwich diagonally into halves and place on the serving plate.

Cook fries (oven/air-fryer/stovetop)
Choose one method: Oven — Preheat oven to 425°F (220°C). Spread the 3 oz frozen shoestring fries in a single layer on a sheet pan, lightly spray or toss with 1 teaspoon oil, and bake 8–12 minutes until crisp, turning once halfway. Air-fryer — Preheat to 400°F (200°C). Place fries in the basket in a single layer and air-fry 6–8 minutes, shaking once. Stovetop (shallow fry) — Heat 1/4 inch oil in a skillet over medium-high heat. Fry fries in batches 2–3 minutes until crisp and golden, drain on paper towels. Timing varies by appliance and fry thickness; cook until hot and crisp.

Season fries
Immediately after cooking, season the fries with 1 teaspoon kosher salt and toss gently to coat.

Plate and serve
Place the toasted sandwich halves on the plate alongside the hot shoestring fries and a pickle spear. Serve immediately.
