Eggs & Bacon

1. Cook bacon

Place a cold 10–12-inch skillet (preferably cast-iron or stainless) on medium heat. Lay 3 slices of applewood-smoked bacon in a single layer. Cook, turning occasionally, until edges are crisp and fat is rendered, about 8–10 minutes depending on thickness. If bacon begins to splatter excessively, reduce heat slightly. Transfer bacon to a plate lined with paper towel to drain.

2. Heat pan for eggs

Pour off excess bacon fat, leaving about 1 teaspoon in the skillet (or wipe out and add 1 tsp neutral oil for a cleaner flavor). Add 1 tablespoon unsalted butter and allow it to melt over medium-low heat until it stops foaming.

3. Cook eggs (sunny-side or over-easy)

Crack 2 large eggs into a small bowl (to check for shells), then gently slide them into the skillet. Cook on medium-low heat for sunny-side up: cover the skillet with a lid and cook until whites are set but yolks are still jiggly, about 3–4 minutes. For over-easy: once whites set (about 2–3 minutes), carefully flip each egg and cook 15–30 seconds more for a runny yolk. Season with 1/2 tsp fine sea salt and a pinch of freshly ground black pepper while cooking.

4. Finish eggs

When eggs reach desired doneness, remove them to a warm plate. Taste and adjust seasoning with remaining salt and pepper if needed. Keep eggs warm while you finish toast and fruit if necessary.

Toast

5. While the bacon is cooking (or after), toast 2 slices of bread in a toaster or under a broiler until golden and crisp to your preference (about 2–4 minutes). Immediately spread 1 tablespoon unsalted butter on the hot toast so it melts in. Optional: cut toast diagonally or serve whole.

Fresh Fruit

6. Wash and prepare 1 cup mixed fresh fruit: hull berries, slice apple or pear, segment orange, or cube melon. Combine in a small bowl and toss with 1 teaspoon fresh lemon juice if using to brighten flavors. Taste and adjust — a light dusting of sugar is optional but not necessary.

Plating & Serve

7. Arrange the two buttered toast slices on a plate. Place the cooked eggs beside the toast and fan the applewood-smoked bacon slices next to them. Add the fresh fruit in a small bowl or directly on the plate. Serve immediately while eggs and bacon are warm. Optional: add hot sauce or extra butter at the table.
