Simple Syrup

Make simple syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Heat over medium, stirring occasionally, until the sugar fully dissolves and the mixture is clear (do not boil vigorously). Remove from heat and let cool to room temperature, about 15–20 minutes. Transfer to a jar and chill if not using immediately.

Juice the lemons
Roll the lemons firmly on the counter to loosen juices. Cut lemons in half and juice them until you have 1 cup (240 ml) of fresh lemon juice. Strain the juice through a fine-mesh sieve into a measuring cup to remove seeds and pulp if you prefer a clearer lemonade.

Combine lemon juice and syrup
In a 2-quart pitcher, combine the 1 cup fresh lemon juice and 1 cup simple syrup. Stir to mix well.

Dilute to taste
Add 3 cups cold water to the pitcher and stir. Taste the lemonade. If it’s too sweet, add more lemon juice or reduce syrup next time; if too tart, add more simple syrup or water. Adjust to preference.

Chill and serve
Add about 2 cups of ice to the pitcher or fill individual glasses with ice. Pour the lemonade over ice, garnish with lemon slices and mint leaves if using. Serve immediately. Keeps refrigerated in a sealed container for up to 4–5 days; stir before serving as separation may occur.
