Eggs & Bacon
- 1
Cook the bacon
Place a large nonstick or cast-iron skillet over medium heat. Lay 6 bacon strips in a single layer. Cook 3–4 minutes per side for medium crispness, flipping once, or longer/shorter to desired doneness. Transfer bacon to a plate lined with paper towels to drain. Reserve 1 tablespoon bacon fat in the pan and discard excess (or wipe out pan if using fresh butter for eggs).
- 2
Scramble the eggs
Crack 4 eggs into a bowl. Add 2 tablespoons milk, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until combined and slightly frothy. In a clean nonstick skillet over low–medium heat, melt 1 tablespoon butter. Pour in the egg mixture. Let sit undisturbed for 10–15 seconds, then with a silicone spatula gently push the set edges toward the center, letting runny egg flow out. Continue folding every 10–15 seconds until soft curds form and eggs are mostly set but still moist, about 2–3 minutes total. Remove from heat, stir in remaining 1 tablespoon butter to finish, and season to taste with additional salt/pepper if desired. Keep warm until serving.
Pancakes
- 3
Make batter: In a medium bowl whisk together 1 cup flour, 1 teaspoon sugar, 2 teaspoons baking powder, and 1/4 teaspoon salt. In a separate bowl whisk 1 cup milk, 1 large egg, and 2 tablespoons melted butter. Pour wet into dry and stir gently until just combined; a few small lumps are fine. Let batter rest 3–5 minutes while you heat the pan.

Cook pancakes: Heat a large nonstick skillet or griddle over medium heat and brush with 1 teaspoon oil or a little butter. For small kid-friendly pancakes, pour 1/4 cup batter per pancake onto the hot surface. Cook until bubbles form on the surface and edges look set, about 1.5–2 minutes, then flip and cook 45–60 seconds more until golden and cooked through. Transfer finished pancakes to a warm plate; keep loosely covered in a low oven (about 90–100°C / 200°F) if making a batch. Serve with maple syrup to taste.
Fruit Cup
- 5
Prepare fruit: In a small bowl combine 1/2 cup strawberries (hulled and quartered), 1/2 banana sliced, 1/2 cup grapes (halved if large), and 1/2 cup orange segments. Toss gently with 1/2 teaspoon lemon juice if using to prevent browning and brighten flavor. Portion into a small cup or bowl for each child.

Timing & tips: Start bacon first, then prepare pancake batter while bacon cooks. Cook pancakes and keep warm while you scramble eggs last so they stay tender. For quicker prep use pre-cooked bacon warmed in the microwave and store-bought pancake mix if desired.
