    Warm milk base

    In a small saucepan over medium-low heat, combine 2 cups whole milk and 1 tablespoon heavy cream. Warm gently until small bubbles form around the edges and steam rises, about 3–4 minutes. Do not let it reach a rolling boil.

    Incorporate cocoa and sugar

    Whisk in 2 tablespoons unsweetened cocoa powder and 2 teaspoons granulated sugar into the warm milk until dissolved and smooth, about 30–45 seconds. Continue to whisk to avoid lumps and to prevent scorching on the bottom.

    Add chocolate and flavor

    Reduce heat to low. Add 2 ounces finely chopped bittersweet or semisweet chocolate, stirring constantly until fully melted and the mixture is glossy, about 1–2 minutes. Stir in 1 teaspoon pure vanilla extract and a pinch of sea salt. If using, add a pinch of cinnamon or cayenne now to taste.

    Finish and serve

    Once the chocolate is fully incorporated and the hot chocolate is hot (but not boiling), remove from heat. Taste and adjust sweetness if needed by adding up to 1 teaspoon more sugar. Pour into two mugs (servings). Top each with whipped cream or marshmallows (about 1 tablespoon each) and serve immediately.
