    Brew coffee

    Bring 2 cups water to a near boil. Add 4 tablespoons coarsely ground coffee to a French press or brewer and pour the hot water over it. Let steep for 4 minutes (French press) or brew according to your brewer's instructions. Press or strain and pour out 2 cups of strong, hot coffee into a heatproof pitcher or directly into serving cups.

    Combine sugar and spices

    In a small bowl, mix 1 tablespoon brown sugar, 1 teaspoon ground cinnamon, 1 teaspoon unsweetened cocoa powder, and a pinch of salt until evenly combined. This will create a balanced flavored sweetener that dissolves easily.

    Dissolve into coffee

    Add the sugar-spice mixture to the hot brewed coffee and stir until fully dissolved. Stir in 1 teaspoon vanilla extract. Taste and adjust sweetness or spice: add up to another 1/2 tablespoon brown sugar or a dash more cinnamon if desired.

    Heat milk/cream

    Warm 1 cup milk or cream in a small saucepan over low heat until steaming but not boiling (about 2–3 minutes). If you prefer a frothy top, froth the warmed milk with a handheld frother or whisk vigorously for 20–30 seconds.

    Assemble flavored coffee

    Pour the flavored coffee into two cups (about 1 cup each). Divide the warmed milk/cream between the cups (about 1/2 cup per cup) and gently stir to combine. If using, add 1 teaspoon flavored syrup to each cup and stir.

    Garnish and serve

    Top each cup with a dollop of whipped cream (about 1 tablespoon each) if desired. Sprinkle a little extra cinnamon or 1/2 teaspoon orange zest over the top for a bright finish. Serve immediately while hot.
