Simmer spices and ginger
Add 2 cups water and sliced fresh ginger to the toasted spices. Increase heat to bring to a gentle boil, then reduce to low and let simmer uncovered for 8 minutes so flavors infuse.

Steep and strain
Remove from heat and allow the mixture to steep off the heat for 5 minutes (longer for stronger flavor). Strain the concentrate through a fine mesh sieve or cheesecloth into a heatproof container, pressing on solids to extract liquid. Discard solids. This yields about 2 cups of concentrated chai (strong).

Make-ahead/storage
Let the concentrate cool to room temperature, then refrigerate in a sealed jar for up to 5 days. Reheat gently before using.

Heat and froth milk
For each serving (about 1 cup total), warm 1/2 cup to 1 cup of milk per cup of finished latte. In a small saucepan, heat milk over medium-low until it begins to steam and small bubbles form around the edge (do not boil). If you have a milk frother, froth until foamy. Alternatively, whisk vigorously, use an immersion blender, or pour milk into a jar and shake tightly for 30–60 seconds, then microwave 20–30 seconds to stabilize foam.

Finish and serve
Pour the combined chai latte into a mug. Spoon and top with milk foam. Dust with a pinch of ground cinnamon. Serve immediately.
