House-made Granola

Toast and bake granola

Preheat the oven to 325°F (160°C). Line a small baking sheet with parchment. In a small bowl combine 1/2 cup gluten-free rolled oats, 2 tablespoons chopped almonds, 1 tablespoon maple syrup, 1 teaspoon melted coconut oil, 1/4 teaspoon vanilla extract and a pinch (1/8 tsp) of salt. Toss until evenly coated. Spread in an even layer on the prepared sheet and bake for 10–12 minutes, stirring once halfway, until golden and fragrant. Allow to cool completely to crisp up.

Blend the base

Add 200 g frozen açaí purée (or two 100 g packets) to a high-speed blender. Add 1 cup frozen pineapple chunks, 1/2 cup ripe banana (about 1/2 a medium banana or 0.5 cups frozen), and 120 ml unsweetened almond milk. Add 1 tablespoon honey or agave for sweetness. If you want an extra-thick bowl texture, add 1/2 cup ice. Pulse the blender first to break the frozen fruit, then blend on high in 10–15 second bursts, using a tamper or stopping to scrape down the sides as needed, until the mixture is very thick, smooth and spoonable (you want the consistency of soft-serve ice cream). If it’s too thin, add a few more frozen pineapple chunks or a bit more frozen banana; if too thick to blend, add 1–2 tablespoons almond milk at a time.

Taste and adjust sweetness. The bowl should be sweet but not syrupy; add up to 1 additional teaspoon honey/agave if desired.

Topping & Assembly

Assemble the bowl

Spoon the thick açaí mixture into a serving bowl, smoothing the top with the back of a spoon.

Arrange toppings neatly over the açaí: 1/4 cup fresh blueberries, 1/4 cup sliced strawberries, 1/4 cup diced pineapple, and 1/2 cup sliced banana (or distribute to taste). Sprinkle the cooled house-made granola evenly over one side or center of the bowl (use all or part depending on desired crunch).

Finish with 1 tablespoon shredded coconut sprinkled on top. If using optional add-ins, drizzle 1 teaspoon almond butter across the top and/or sprinkle 1 teaspoon chia seeds for added texture and nutrition.

Serve immediately with a spoon. If preparing ahead, keep the blended açaí cold and assemble within 30 minutes to preserve texture.
