Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped shallots and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.

Add Tomato Paste and Wine

Mix in the tomato paste and cook for 2 minutes. Pour in the dry white wine, scraping the bottom of the pot to release any browned bits. Allow to simmer for about 5 minutes.

Incorporate Stock and Seasoning

Add the fish stock, salt, black pepper, cayenne pepper, and bay leaves. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 15 minutes.

Blend the Soup

Remove the bay leaves. Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.

Add Seafood and Cream

Stir in the heavy cream and mixed seafood. Cook for another 5-7 minutes, or until the seafood is cooked through.

Garnish and Serve

Taste and adjust seasoning if needed. Garnish with fresh chopped parsley before serving.
