Cheese & Charcuterie

Method

Cheese & Charcuterie

1

Plate the cheese and meats

Remove Swiss cheese from refrigerator 10–15 minutes before plating to come closer to room temperature. Arrange sliced Swiss cheese in a fan or overlapping rows on one side of a serving board or individual plates. Neatly layer the sliced artisanal sausage next to the cheese. Place duck rillettes in a small ramekin; serve at room temperature so it's spreadable.

2

For presentation: garnish the charcuterie area with a few torn herb leaves and tuck 2–3 halved cornichons alongside the ramekin of rillettes. Provide a small butter knife for spreading the rillettes onto toast.

Greens & Garnish

3

Dress the greens

In a small bowl or jar combine white wine vinegar, Dijon mustard, a pinch of salt, and freshly ground black pepper. Whisk while slowly streaming in the extra-virgin olive oil until emulsified. Taste and adjust seasoning. (About 1 minute.)

4

Place mixed salad greens in a large bowl. Add halved cherry tomatoes and chopped fresh herbs. Drizzle 1–2 tablespoons of the vinaigrette and gently toss just to coat — avoid overdressing. Transfer a portion of the dressed greens to the serving board or plates beside the cheese and charcuterie.

Fruit Salad

5

Prepare the fruit

In a medium bowl combine honeydew, cantaloupe, halved grapes, and berries. In a small bowl whisk together fresh orange juice and honey until combined. Pour the orange-honey mixture over the fruit and gently toss to combine. Fold in torn mint leaves. Let the fruit marinate 5–10 minutes at room temperature to meld flavors.

6

Spoon the fruit salad into a small serving bowl or portion onto the board. If serving family-style, keep extra fruit chilled separately.

Dressing & Bread

7

Toast the bread

Lightly toast the sliced baguette or country bread until golden and crisp at the edges (about 3–5 minutes under a broiler, or in a toaster). If desired, rub warm toasts lightly with a halved garlic clove for extra aroma.

8

Arrange the toasts near the duck rillettes and the cheese so guests can assemble bites. Finish the board with a final drizzle of quality olive oil over the greens if desired and a sprinkle of extra herbs for color.
