Mussels
Clean and discard
Inspect mussels and discard any with broken shells or that do not close when tapped. Rinse under cold water, scrub shells and remove beards with a knife or by hand.
Steam mussels
In a large wide pot with a tight-fitting lid, combine 1 cup water and 1 cup dry white wine. Add 2 tablespoons olive oil and 1 teaspoon kosher salt and bring to a vigorous simmer over medium-high heat. Add the cleaned mussels, cover, and steam for 4–6 minutes, shaking the pot once or twice, until shells open. Discard any mussels that remain closed.
Escabeche Marinade
Prepare aromatics
While mussels steam, thinly slice 4 garlic cloves and 1 medium shallot. Zest 1 tablespoon lemon and squeeze 2 tablespoons lemon juice. Chop parsley and optional cilantro.
Warm the marinade
In a small saucepan combine 1 cup white wine vinegar, 1 cup water, 1 cup extra-virgin olive oil, 1 teaspoon black peppercorns, 4 allspice berries (if using), 2 bay leaves, 4 thyme sprigs, 1 teaspoon sugar, 1 teaspoon kosher salt, and red pepper flakes if using. Add the sliced garlic and shallot. Warm over medium heat until just steaming and small bubbles form around the edges (do not boil), about 4–5 minutes. Warming blooms the aromatics and mellows the vinegar.
Cool the marinade
Remove the saucepan from heat and let the marinade cool for 10–15 minutes so it is warm but not hot. Stir in the lemon zest, lemon juice, chopped parsley and cilantro. Taste and adjust seasoning—add more salt or sugar for balance if needed.
Assembling & Serving
Marinate and chill
Cover the dish tightly and refrigerate for at least 2 hours, preferably 4–8 hours, to allow flavors to develop. The mussels are served cold; the longer they marinate (up to 24 hours) the more pronounced the escabeche flavor. Do not keep longer than 48 hours for best quality.
Finish and serve
Before serving, bring to slightly below fridge temperature by leaving the dish out for 5–10 minutes. Taste and adjust: sprinkle additional chopped parsley, a few cracks of black pepper, and serve with lemon wedges. Serve cold as an a la carte appetizer. Provide crusty bread to soak up the marinade, if desired.
