Temper and form chocolate shell

Chop the dark chocolate finely and melt two-thirds of it in a heatproof bowl over simmering water (double boiler) until it reaches about 45°C (113°F). Remove from heat and stir in the remaining one-third chocolate until the temperature cools to about 31–32°C (88–90°F). If you do not temper, simply melt gently and allow to cool slightly. Working quickly, brush or pour tempered chocolate into silicone half-sphere molds (about 3 in / 7.5 cm diameter) to form a thin, even shell — rotate molds to coat sides. Place molds in the refrigerator for 5–10 minutes to set, then repeat with a second thin layer for a sturdier shell. Chill until fully set (20–30 minutes).

Prepare coconut mousse filling

Bloom gelatin: sprinkle 1 tsp gelatin over 2 tbs cold water, let stand 5 minutes. Warm 1/4 cup coconut cream in a small saucepan with 1 tbsp sugar until just warm (do not boil). Stir in bloomed gelatin until dissolved, then remove from heat. In a bowl, whip remaining 3/4 cup chilled coconut cream with 1 cup heavy cream, 2 tbsp sugar, 1 tsp vanilla extract and a pinch of salt until soft peaks form. Fold the dissolved gelatin mixture gently into the whipped creams, then fold in 1 cup unsweetened shredded coconut. Transfer mousse into a piping bag and pipe into half-sphere chocolate shells, filling to about 80%. Smooth the top. Place filled halves on a tray in the freezer for at least 2 hours (or until firm) to set and make assembly easier.

Seal domes

Warm a baking sheet in the oven for 1–2 minutes. Remove the frozen filled halves from molds. Quickly press two filled halves together, sealing the rim by briefly touching the rim to the warm baking sheet to slightly melt edges, then press to close. Return sealed domes to refrigerator to fully firm for 30 minutes. Store chilled until ready to serve.

Citrus-Passion Gel

Make the passion gel: combine 1 cup passion fruit pulp, 1/4 cup fresh orange juice, 1 tbsp lemon juice, and 2 tbsp sugar in a small saucepan. Whisk in 1 tsp agar-agar powder until evenly distributed. Bring mixture to a gentle simmer over medium heat, stirring constantly. Simmer 1–2 minutes to activate agar, then remove from heat. Cool slightly (5–10 minutes) and pour into a shallow container to set. Once set, use an immersion blender to blitz to a glossy gel texture or leave slightly chunky for texture. Portion about 1–1.5 tbsp gel per dome and refrigerate until assembly.

Crunchy Coconut Base

Prepare the base: preheat oven to 350°F (175°C). Spread 1 cup toasted coconut flakes on a sheet and toast 5–7 minutes until golden (if not already toasted). In a bowl, combine toasted flakes, 3/4 cup cracker crumbs, 2 tbsp light brown sugar, a pinch of salt, and 3 tbsp melted coconut oil or butter. Mix until evenly moistened. Press about 2 tbsp of the mixture into the bottom of a small ring mold or directly onto serving plates to form a compact 2–3 inch base. Chill in fridge to firm while finishing other components.

Assembly & Finish

Assemble domes: remove chilled bases and domes from refrigerator. Place each dome on a small offset spatula and set gently onto the crunchy coconut base. Using a small spoon or piping bag, place 1–1.5 tbsp passion-citrus gel at the base edge where it slightly meets the dome so a bit of gel peeks out when cut.

Garnish and serve: dust each dome lightly with 1 tsp powdered sugar (sifted), sprinkle toasted coconut shards around the base, and add a small piece of edible gold leaf on top if using. Let domes sit 5–10 minutes at room temperature before serving so the shell cracks nicely when cut. Serve chilled; store leftovers tightly covered in refrigerator up to 48 hours.
