Prepare and bake sponge

Preheat oven to 200°C (390°F). Line a 30 x 25 cm (12 x 10 in) jelly-roll pan with parchment paper and lightly butter the paper. Sift together cake flour, cocoa powder and salt into a bowl and set aside. In a large heatproof bowl, whisk the eggs and granulated sugar together briefly. Place the bowl over a double boiler (simmering water, bowl not touching water) and whisk continuously until warm to the touch and sugar is dissolved (about 2–3 minutes) and the mixture reaches about 40–45°C (105–115°F). Remove from heat and using a hand mixer or stand mixer, beat on high until the mixture becomes thick, pale, and tripled in volume (ribbon stage), about 5–7 minutes. Beat in vanilla extract. Fold the sifted dry ingredients into the whipped egg mixture in two additions using a spatula, folding gently to avoid deflating. Fold in the melted cooled butter just to combine. Spread the batter evenly into the prepared pan, smoothing the top. Bake for 8–10 minutes, until the sponge springs back when lightly touched and a toothpick comes out mostly clean. Remove from oven.

While still warm, invert the sponge onto a clean kitchen towel dusted with a little powdered sugar or another sheet of parchment. Peel off the lining paper. Starting at one short end, roll the sponge up with the towel (or parchment) inside to form the roll shape, which trains the cake to bend without cracking. Let cool completely rolled up on a rack (about 30–40 minutes).

Coffee syrup (for brushing)

Combine the brewed coffee and granulated sugar in a small saucepan and warm gently until sugar dissolves. Remove from heat and stir in the rum or coffee liqueur if using. Let cool to room temperature. Reserve.

Chocolate ganache filling

Make ganache

Place the chopped chocolate in a heatproof bowl. Heat the cream in a small saucepan until it just begins to simmer (do not boil). Pour the hot cream over the chocolate and let sit for 1 minute, then stir gently until smooth and glossy. Add the butter and stir until incorporated. If using powdered sugar for extra sweetness, whisk it in now. Allow the ganache to cool and thicken until spreadable but still soft (room temperature, about 20–30 minutes).

Unroll the cooled sponge gently. Brush the interior lightly and evenly with the coffee syrup. Spread the ganache over the sponge in an even layer, leaving about 1 cm border at the far edge to avoid overflow when re-rolling.

Re-roll the sponge tightly (without the towel) into a log. Seal the seam by pressing gently. Trim the ends cleanly with a serrated knife and set the roll seam-side down on a wire rack set over a tray to catch glaze.

Prepare glaze and coat

Place the chopped chocolate and butter (or oil) in a heatproof bowl. Melt gently over a double boiler or in 20–30 second bursts in the microwave, stirring between bursts, until smooth. Let cool slightly so it is pourable but not too hot (so it won't melt the ganache).

Pour the glaze over the chilled roll on the wire rack, using an offset spatula to smooth and let excess drip off. For a bark texture, use the back of a fork or spatula to comb the glaze lengthwise to create wood-grain lines. Optionally press a small additional spoonful of slightly different-tempered melted chocolate in some places for texture.

Transfer the glazed individual log to a serving plate and refrigerate for at least 20–30 minutes to set the glaze and firm the roll. If desired, cut a short offcut and press it to the side of the main log to mimic a branch; re-glaze the join.

Decoration

Dust lightly with confectioners' sugar to resemble snow. Arrange mini meringues, candied cranberries, or sugared rosemary as festive accents. Apply small bits of edible gold leaf or dust if using. Keep refrigerated until serving; bring to room temperature for 15–20 minutes before serving for best texture.
