Cheeses
Temperature & Prep
Remove all cheeses from the refrigerator 30–60 minutes before serving so they come to room temperature — this loosens texture and amplifies flavor.
Soft cheese presentation
Place the soft cheese (Brie or Camembert) whole on the board. If desired, score the top gently in a crosshatch pattern for presentation; leave uncut so guests can slice.
Semi-soft & semi-hard
Cut the semi-soft cheese (Tomme/Reblochon) into 1–1.5 cm thick wedges. Cut the semi-hard cheese (Comté/Gruyère) into thin triangles or cubes that are easy to pick up.
Blue & chèvre
Crumble a portion of the blue cheese into a small heap or keep it in a small dish if very runny. For the fresh chèvre, slice the log into 1 cm rounds and arrange them in a fan; drizzle with 1 tsp olive oil and a couple of thyme leaves if using.

Accompaniments — Fresh & Pickled
Rinse and pat dry the grapes and leave small clusters intact for easy picking. Core and thinly slice the pear and apple just before serving to prevent browning; fan the slices attractively on the board. Place cornichons in a small dish or neat pile. Scatter almonds in a small bowl or cluster near the cheeses.
Accompaniments — Condiments & Extras
Spoon fig or apricot jam into a small serving bowl. Place honey in a separate small jar or dish and provide a small spoon for drizzling. Put grainy mustard in a tiny bowl. Garnish the board with a couple sprigs of thyme or rosemary for aroma and color.
Assembly
Layout
Choose a large wooden board or platter. Start by placing the cheeses spaced apart (soft, semi-soft, semi-hard, blue, chèvre). Add small bowls/dishes for jam, honey, and mustard near cheeses that pair well with them (blue cheese with honey, chèvre with olive oil and thyme, hard cheese with jam).
Fill the gaps between cheeses with clusters of grapes, sliced fruit, cornichons, almonds and crackers/bread. Keep colors and textures balanced: place light and dark items alternately and keep items for spreading (soft cheese, jam) close to appropriate breads/crackers.
Label the cheeses if serving guests unfamiliar with the selections, using small tent cards or toothpicks with names.
Provide one cheese knife per cheese type (soft, semi-hard, hard/crumbly) and small spreaders for condiments. Serve immediately once assembled so cheeses remain at ideal temperature.
