Chocolate Cake Layers

Prepare and preheat

Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper; grease the parchment. Whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large bowl until evenly combined.

Combine wet ingredients

In a separate bowl, whisk eggs lightly, then add buttermilk, vegetable oil and vanilla extract. Whisk until uniform.

Mix batter

Add the wet mixture to the dry ingredients and mix until just combined. Slowly add the hot water while mixing on low speed (or whisk by hand) until the batter is smooth and pourable. The hot water blooms the cocoa and thins the batter; it's expected to be loose.

Bake

Divide batter evenly between the prepared pans. Bake 25–30 minutes, or until a toothpick inserted in the center comes out with moist crumbs but not wet batter. Rotate pans halfway through baking for evenness.

Cool

Allow cakes to cool in pans for 10 minutes, then invert onto a wire rack, remove parchment, and cool completely before assembling. If needed, level the domes with a serrated knife once cooled.

Bloom gelatin

Sprinkle gelatin over the cold water in a small bowl and let stand 5 minutes to bloom.

Melt chocolate

Place chopped milk chocolate and butter in a heatproof bowl. Heat 1/2 cup of the heavy cream to just simmering and pour over the chocolate. Let sit 1 minute, then stir until smooth and glossy. If needed, microwave in 10-second bursts to finish melting but avoid overheating.

Incorporate gelatin & chill

Microwave the bloomed gelatin briefly (5–8 seconds) or warm it until liquid, then stir into the warm chocolate mixture until fully incorporated. Stir in the remaining 1 cup heavy cream and 2 tablespoons sugar; allow the mixture to cool to room temperature (about 15–20 minutes).

Whip & fold

Whip the cooled chocolate-cream mixture (or whip the 1 cup heavy cream separately to soft peaks and fold into the chocolate base) until light and mousse-like. Aim for soft peaks—do not overwhip. Chill in refrigerator to set slightly (30–45 minutes) so it is pipeable for assembly.

Dark Chocolate Ganache

Prepare ganache

Place chopped dark chocolate in a bowl. Heat 3/4 cup heavy cream until just simmering and pour over the chocolate. Let sit 1 minute then stir until smooth. Add the tablespoon of softened butter and stir until glossy. Let cool to a spreadable consistency (15–20 minutes).

White Chocolate Glaze & Decoration

Make glaze

Place chopped white chocolate in a bowl. Heat 1/4 cup heavy cream to simmering and pour over the white chocolate. Let sit 1 minute, then stir until smooth. Stir in neutral oil if using for extra shine. Keep warm but not hot so glaze remains pourable.

Prepare garnish

Have cocoa nibs or shaved chocolate ready for sprinkling on top after glazing.

Assembly & Finish

Optional simple syrup

If using, combine 1/4 cup simple syrup with 1/2 teaspoon vanilla (or brush directly on cakes). Lightly brush both cake layers with syrup to maintain moisture.

Layering

Place one cake layer on a cake board or serving plate. Spread half of the milk chocolate mousse in an even layer (about evenly distributed). Place the second cake layer on top and press gently.

Crumb coat and chill

Apply a thin crumb coat of the dark chocolate ganache around the top and sides to lock in crumbs. Chill the cake in the refrigerator 20–30 minutes to set the crumb coat.

Final coat

Spread remaining dark chocolate ganache over the top and sides for a smooth finish. Smooth with an offset spatula or bench scraper. Chill briefly to set (10–15 minutes).

White chocolate pour & decorate

Warm the white chocolate glaze slightly if it has thickened, then pour or drizzle it over the center of the cake to create an attractive contrast. Allow glaze to run toward the edges but not fully cover the ganache if you want visible layers. Sprinkle cocoa nibs or shaved chocolate on top while glaze is still tacky.

Chill & serve

Chill the assembled cake for at least 1 hour to let mousses and ganache set. Remove from refrigerator 15–20 minutes before serving to soften slightly for easier slicing. Slice with a sharp knife dipped in hot water and wiped dry between slices for clean cuts.
