Ham, cheddar cheese, fresh tomatoes, and arugula.

Sliced turkey, lettuce, tomato, and mustard in a whole wheat wrap.

Select ripe Merlot and Cabernet Franc grapes from the vineyard, ensuring they are free of rot or disease.

Destem and crush the grapes to release their juice and pulp. This can be done using a mechanical destemmer-crusher.

Add the yeast to the crushed grapes and allow fermentation to occur in a controlled environment (around 25-30°C) for 2-3 weeks. Stir regularly.

After fermentation, press the mixture to separate the liquid wine from the solid grape skins and seeds.

Allow the wine to clarify for a few days, then siphon off the clear wine, leaving the sediment behind.

Transfer the wine into French oak barrels for aging. Allow it to age for at least 12-18 months, depending on the desired flavor profile.

Once the aging process is complete, filter and bottle the wine. Add sulfur dioxide for preservation and seal tightly.
