Prepare produce

Wash lettuce leaves and pat dry. Slice the tomato into 4 even rounds. If using avocado, halve it, remove the pit and thinly slice half for sandwiches. Season tomato slices lightly with 1/2 tsp salt and 1/4 tsp black pepper; set aside.

Toast or grill bread (optional)

Lightly butter one side of each bread slice (use about 2 tbs total). Heat a skillet over medium heat and place buttered sides down, toasting each slice for 1–2 minutes until golden. Alternatively, use a toaster. Remove and keep warm.

Mix condiments

In a small bowl combine mayonnaise (4 tsp) and Dijon mustard (2 tsp). If you want a spicy kick, stir in hot sauce (1 tsp) from optional add-ins. Spread about 1 tsp of the mayo-mustard mixture on the unbuttered side of four bread slices and reserve the other four for tops.

Assemble sandwiches

On each bottom slice (the one with mayo-mustard), layer 2 slices smoked turkey, 1 slice sharp cheddar, 1 leaf lettuce (or tear to fit), and 2 tomato rounds. If using bacon, avocado, or pickles, add them now. Sprinkle a pinch (about 1/8 tsp) of salt and pepper over tomato or avocado if included.

Finish

Top each sandwich with the remaining bread slices (toasted side up if toasted). Press firmly and cut each sandwich in half diagonally. Serve immediately while warm, or wrap tightly for later.

Optional Add-ins

Crispy bacon: Cook bacon in a skillet over medium heat 6–8 minutes, turning, until crispy. Drain on paper towels and add 2 slices per sandwich when assembling.

Avocado: Slice 1/2 avocado thinly and add 3–4 slices per sandwich. Squeeze a little lemon juice on the avocado if you have it to prevent browning (not included in ingredient list).

Pickles & hot sauce: Add pickles directly to sandwich during assembly (1–2 slices each). Mix hot sauce into the mayo-mustard as desired.
