Method
Sea Bream Fillet
Prepare fillets
Pat fillets very dry with paper towel. Season skin and flesh lightly with 1 tsp sea salt and 1/2 tsp black pepper. Lightly dust the flesh side (not the skin) with the 2 tbs flour — shake off excess.
Pan-fry fillets
Place fillets skin-side down and press gently with a spatula for 15 seconds to ensure even contact. Cook skin-side down without moving for 3–4 minutes, until skin is crisp and the flesh is mostly cooked (white and starting to flake). If the pan becomes too hot, reduce to medium. Flip fillets and add 1 tbs butter to the pan. Spoon the melted butter over the flesh for 30–45 seconds to finish cooking (internal temperature ~55–60°C / 130–140°F). Remove fillets to a warm plate and rest 2 minutes.
Saffron Rice
Bloom saffron
Place saffron threads in 2 tbs hot water and let steep 5–10 minutes until color and aroma develop.
Cook rice
In a small saucepan, combine rinsed rice, 1.5 cups water, 1 tbs butter, 2 tbs cream, 1/2 tsp salt, and the saffron with its soaking liquid. Bring to a gentle boil, then reduce to low, cover tightly and simmer 15 minutes until liquid is absorbed and rice is tender. Remove from heat and let sit covered 5 minutes, then fluff with a fork.
Fennel Salad
Ajoblanco (Almond-Garlic Cold Sauce)
Soak bread & process almonds
Soak the torn bread in 3 tbs cold water until softened, then squeeze lightly to remove excess water. In a blender or food processor, combine blanched almonds, soaked bread, garlic clove, 1 tbs vinegar and 1/2 tsp salt. Pulse to a coarse paste.
Emulsify sauce
With the motor running, slowly stream in 3 tbs extra-virgin olive oil until the mixture becomes a smooth, creamy emulsion. Taste and adjust seasoning with more salt or a splash more vinegar if needed. If sauce is too thick, thin with 1–2 tbs cold water to reach a spoonable, velvety consistency. Chill briefly if desired.
Dill Oil
Blanch dill in boiling water for 10 seconds (to preserve green color), then immediately transfer to an ice bath. Dry thoroughly and combine dill with 1/2 cup neutral oil and 1/8 tsp salt in a blender. Blend on high until very smooth and bright green (about 30–45 seconds). Strain through a fine sieve or cheesecloth into a small bowl, pressing to extract oil. Reserve in refrigerator; bring to room temperature before plating if chilled.
Plating & Finish
Spoon a bed of saffron rice onto each plate (about 1/2 cup per serving). Place a portion of fennel salad alongside or lightly on top of the rice. Spoon a few tablespoons of ajoblanco to one side of the rice (create a small pool). Place the pan-fried sea bream fillet skin-side up over the rice and fennel. Drizzle dill oil around the plate and a small streak over the fillet (about 1–2 tbs oil total per plate). Garnish with microgreens or dill sprigs and a lemon wedge. Serve immediately.
