Preheat and prepare

Preheat oven to 350°F (175°C). Lightly grease a 9-inch round cake pan or line with parchment paper and set aside.

Combine dry ingredients

In a large bowl, whisk together the all-purpose flour (2 cups), granulated sugar (1/2 cup), baking powder (2 tsp), and fine sea salt (1/2 tsp) until evenly distributed.

Mix wet ingredients

In a separate bowl, whisk the 2 large eggs, whole milk (1 cup) and melted unsalted butter (1/4 cup) until smooth and slightly frothy.

Combine wet and dry

Pour the wet mixture into the dry ingredients. Stir gently with a spatula until just combined — do not overmix; a few small lumps are fine.

If using lavender buds

Lightly grind 1 tsp dried culinary lavender in a spice grinder or mortar and pestle until fragrant but not powdery. Sprinkle into the batter and fold in gently. Let batter rest 5 minutes to infuse.

If using lemon zest

Add 1 tbsp finely grated lemon zest directly into the batter and fold until evenly distributed. For brighter flavor, squeeze 1/2 tbsp lemon juice into the wet mixture before combining (optional).

If using matcha powder

Sift 1 tsp matcha powder into the batter to avoid clumps and fold until the batter is uniformly green. If needed, add 1-2 tsp extra milk to loosen the batter.

If using vanilla bean paste

Stir 1 tsp vanilla bean paste into the wet ingredients before combining with the dry. Fold batter until vanilla is evenly distributed.

If using smoked paprika

Whisk 1/2 tsp smoked paprika into the dry ingredients before adding wet ingredients so the smoky note disperses evenly. Fold batter gently.

If using honey

Replace 1 tbsp of the granulated sugar by stirring 1 tbsp honey into the wet mixture (whisk with the eggs/milk) before combining. Honey adds moisture and a subtle floral sweetness—reduce oven time by 3-5 minutes if needed.

If using blue spirulina

Sift 1/2 tsp blue spirulina powder into the wet mixture and whisk until the batter turns an even blue hue. Because spirulina can clump, ensure thorough sifting and gentle whisking.

Bake & Finish

Bake

Pour the finished batter into the prepared 9-inch pan and smooth the top. Bake in the preheated 350°F (175°C) oven for 22–28 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. If you used honey, start checking at 18 minutes.

Cool

Remove the cake from the oven and let it cool in the pan on a wire rack for 10 minutes. Then invert or lift out onto the rack to cool completely (about 30–40 minutes) before garnishing.

Garnish

Dust the cooled cake with powdered sugar (2 tbsp). Arrange fresh berries (1 cup) on top or at the side and scatter microgreens or edible flowers (1/4 cup) for a magical presentation. Serve slices at room temperature.
