Espresso
Preheat and dose
Warm the espresso machine grouphead and portafilter by running a short blank shot (about 5–8 seconds). Using a calibrated grinder, grind 18 g of coffee to a fine espresso texture (looks like slightly gritty powder).
Tamp and lock in
Distribute the ground coffee evenly in a clean, dry portafilter basket. Use a consistent tamp with about 30 lbs (13 kg) pressure to create a level puck. Wipe the portafilter rim and lock it into the group.
Pull the shot
Start extraction and target a yield of ~40 ml in 25–30 seconds. Watch for a steady, honey-colored stream turning to caramel. Stop extraction at the correct yield/time. If extraction is too fast or slow, adjust grind size by small increments.
Milk (for milk-based option)
Purge and prepare steam wand
Purge the steam wand briefly to remove condensation. Wipe with a clean cloth and position a chilled milk pitcher with 150 ml whole milk under the wand.
Stretch and steam milk
Submerge the tip of the wand just below the surface and introduce air for 2–4 seconds to stretch milk (create microfoam). Then submerge deeper and continue steaming until the pitcher feels warm to the touch (about 60–65°C). Aim for glossy, velvety microfoam with very small bubbles.
Finishing & Optional
Sweeten and garnish
If you prefer sweetness, stir in 1 tsp of sugar or simple syrup into the espresso before pouring milk. Finish with a light dusting (about 1/4 tsp) of cocoa powder or ground cinnamon on top of the crema or microfoam.
Clean-up
Purge and wipe the steam wand immediately after steaming. Knock out the used puck and rinse the portafilter. Flush a short shot of water through the grouphead to keep the machine ready for the next shot.
