Combine diced tomatoes, minced garlic, chopped basil, 2 tablespoons olive oil, balsamic vinegar, 1 tsp salt and 1/2 tsp pepper in a bowl. Stir and let marinate 10–15 minutes to meld flavors.

Preheat oven to 425°F (220°C). Arrange baguette slices on a baking sheet and brush both sides lightly with olive oil (about 2 tablespoons). Toast in the oven 5–7 minutes, flipping once, until golden and crisp.

Spoon the tomato mixture onto each toasted slice just before serving so bread stays crisp. Optionally drizzle a little extra olive oil or balsamic glaze over the finished bruschetta.

Mini Caprese Skewers

On each toothpick or small skewer, thread one cherry tomato, one basil leaf (folded if large), and one mini mozzarella ball. Repeat until all components are used.

Remove from heat and stir in 1/2 cup cream cheese, 1/4 cup grated Parmesan, 2 tablespoons chopped parsley, 1/2 tsp salt and 1/4 tsp black pepper until well combined. If too soft, fold in 1/4 cup breadcrumbs to achieve a scoopable filling.

Spoon filling into each mushroom cap, mounding slightly. Sprinkle a touch of additional breadcrumbs or Parmesan on top for browning.
