Prepare Scallops
Remove any side muscle from each scallop if present. Pat scallops very dry with paper towels—dry surface is critical for good sear. Season both sides lightly with 3/4 tsp of the sea salt and 1/4 tsp black pepper, reserving remaining salt and pepper for finishing.

Cook Pancetta Lardon
In a medium skillet over medium heat, add the diced pancetta lardon. Cook, stirring occasionally, until fat renders and pieces are crisp and golden, about 6–8 minutes. Using a slotted spoon, transfer pancetta to a paper towel–lined plate, leaving rendered fat in the pan. Reduce heat to low and wipe off excess fat if more than 1 tbsp remains, reserving about 1 tsp of fat in pan for flavor.

Sear Scallops
Increase heat to medium-high and add 1 tbsp olive oil and 1 tbsp butter to the pan with reserved pancetta fat. When the pan is shimmering and butter is foaming, place scallops into pan spaced apart (work in two batches if needed). Sear without moving until a deep golden crust forms, about 1.75–2.25 minutes per side depending on size. Flip and sear the other side ~1.5–2 minutes until just opaque in the center. Remove scallops to a warm plate and tent loosely with foil.

Finish & Plate
Return the pan to low heat, add the crisped pancetta to warm through. Stir in remaining 1 tbsp butter and lemon juice; swirl to create a glossy spooning butter. Taste and adjust seasoning. Arrange a smear of wax pepper coulis on each plate, spoon shallot & leek cream beside it, place seasonal vegetables, then top cream with three scallops per plate. Spoon pancetta and butter over scallops, drizzle 1 tsp finishing olive oil, sprinkle microgreens or chives, and finish with a light grind of black pepper and a pinch of sea salt if desired.

Roast Peppers: If peppers are not already roasted, broil or char them over a gas flame until skin is blistered and blackened, then place in a covered bowl to steam 10 minutes and peel, remove stems and seeds. Roughly chop roasted wax peppers.

Blend Coulis: Transfer the cooked aromatics and chopped roasted peppers to a blender or use an immersion blender. Add 1 tsp white wine vinegar, 1/2 tsp honey, 1/2 tsp salt, and 2 tbsp water. Puree until very smooth. Taste and adjust seasoning; if too thick, thin with up to another 1–2 tbsp water. Strain through a fine sieve for a velvety texture if desired. Keep warm or at room temperature until plating.
Shallot & Leek Cream

Sweat Aromatics: In a small saucepan over medium-low heat, melt 1 tbsp butter. Add sliced shallot and sliced leek. Gently sweat, stirring occasionally, until softened and translucent but not colored, about 6–8 minutes.

Deglaze & Simmer: Increase heat to medium, add 1 tbsp dry white wine (if using) and let it reduce by half, about 1–2 minutes. Add 1/4 cup stock and bring to a gentle simmer. Cook until leek is very tender and liquid is reduced slightly, about 3–4 minutes.

Finish Cream: Stir in 1/2 cup heavy cream and 1/4 tsp salt and 1/4 tsp black pepper. Simmer gently, stirring, until the mixture thickens enough to coat the back of a spoon, about 4–6 minutes. If you prefer an ultra-smooth sauce, transfer to a blender or use an immersion blender and puree until smooth. Keep warm over the lowest heat, stirring occasionally, or hold in a warm spot until plating.
Seasonal Vegetable

Prepare Vegetables: Trim and, if necessary, blanch or halve the chosen seasonal vegetables so they are bite-sized and cook evenly (for asparagus tips or haricots verts, trim ends; for baby carrots, peel and halve lengthwise).

Cook Vegetables: In a sauté pan over medium-high heat, add 1 tsp olive oil. Add vegetables in a single layer and sauté, tossing occasionally, until just tender-crisp and bright in color — about 3–5 minutes depending on vegetable. Season with 1/4 tsp salt and 1/4 tsp black pepper. Remove from heat and keep warm until plating.
