In a large brew kettle, heat 5 liters of water to 66°C (150°F). Add the pale malt, crystal malt, and flaked corn to the water. Stir well and maintain the temperature for 60 minutes to allow the grains to convert starches to sugars.

Mashing the Grains

After mashing, sparge the grains with an additional 3 liters of water heated to 75°C (167°F) to extract more sugars. Collect the wort in the brew kettle.

Sparging

Bring the wort to a boil. Add Hallertau hops and boil for 60 minutes. Add Cascade hops in the last 10 minutes of the boil.

Boiling the Wort

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches room temperature.

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal the vessel with an airlock. Allow it to ferment at 18-20°C (64-68°F) for 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water and add it to the bottling bucket. Transfer the beer into the bottling bucket, mix gently, and bottle the beer into sanitized bottles.

Bottling

Cap the bottles and let them carbonate at room temperature for another 1-2 weeks.

Carbonation
