In a large pot, heat 3 liters of water to approximately 67°C (152°F). Add the pale malt and caramel malt, stirring well. Maintain this temperature for 60 minutes.

Mash the Grains

After the mash, rinse the grains with an additional 2 liters of hot water to extract the sugars, collecting the liquid in a brew kettle.

Sparging

Bring the collected wort to a boil. Once boiling, add the Cascade hops and boil for 60 minutes. After 45 minutes, add the Saaz hops.

Boil the Wort

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 20°C (68°F).

Cool the Wort

Transfer the cooled wort to a fermentation vessel and add the lager yeast. Seal the vessel and let it ferment at around 10-12°C (50-54°F) for 2-3 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water and add it to the beer before bottling. Fill your bottles, cap them, and let them carbonate at room temperature for another 1-2 weeks.

Bottling

After carbonation, chill the bottles in the fridge. Serve cold and enjoy your homemade Heineken-style pale lager!
