In a large mash tun, combine the pale malt, roasted barley, and caramel malt with 5 liters of hot water. Stir well to ensure all grains are wet. Let the mash rest for 60 minutes at 65°C (149°F).

Prepare the Mash

After the mash rest, separate the liquid (wort) from the grains. This can be done by draining the wort into a kettle and sparging the grains with additional hot water.

Lautering

Bring the wort to a boil and add the bittering hops. Boil for 60 minutes, adding the aroma hops in the last 15 minutes of the boil.

Boil the Wort

Once the boil is complete, cool the wort quickly using a wort chiller or an ice bath until it reaches around 20°C (68°F).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal the vessel with an airlock and let it ferment at around 20°C (68°F) for 1-2 weeks.

Fermentation

Once fermentation is complete, transfer the beer to sanitized bottles. Add priming sugar if carbonation is desired. Cap the bottles and let them condition for another 1-2 weeks.

Bottling
