Heat 20 liters of water to 67°C (153°F). Add the Pilsner malt, debittered roasted malt, and caramel malt to the water. Hold the temperature for 60 minutes to allow for conversion.

Mashing

After mashing, sparge the grains with water at 75°C (167°F) to collect around 25 liters of wort.

Sparging

Bring the wort to a boil and add 50 grams of noble hops. Boil for 60 minutes.

Boiling

After boiling, cool the wort rapidly to around 10°C (50°F).

Cooling

Transfer the cooled wort to a sanitized fermenter and pitch the lager yeast. Seal the fermenter and allow it to ferment at 10°C (50°F) for 2-3 weeks.

Fermentation

Once fermentation is complete, prepare a priming solution with 100 grams of priming sugar dissolved in a small amount of water. Add this to the beer before bottling.

Bottling

Bottle the beer and let it condition at room temperature for 1-2 weeks before refrigerating.

Conditioning

Chill the beer and pour it into a glass. Enjoy the rich flavors of chocolate, coffee, and dark fruit!
