In a large pot, heat 3 liters of filtered water to about 66°C (150°F). Add Pilsner malt, Wheat malt, and Munich malt. Stir well and maintain the temperature for 60 minutes.

Mashing

After mashing, sparge with an additional 2 liters of heated water to collect the wort in a brew kettle.

Sparging

Bring the wort to a boil and add Hallertau hops. Boil for 60 minutes.

Boiling

Cool the wort quickly using a wort chiller or ice bath until it reaches about 20°C (68°F).

Cooling

Transfer the cooled wort to a sanitized fermenter. Pitch the Hefeweizen yeast and seal with an airlock. Allow it to ferment for 1-2 weeks at around 20-22°C (68-72°F).

Fermentation

Once fermentation is complete, dissolve corn sugar in a small amount of boiling water and add to the beer. Bottle the beer and cap. Allow to carbonate for 1-2 weeks.

Bottling

Chill the bottles, pour into a glass, and enjoy your homemade Hefeweizen!
