Beef Tenderloin Preparation

Prepare the Beef

Preheat the oven to 400°F (200°C). Season the beef tenderloin generously with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Sear the beef on all sides until browned, about 2-3 minutes per side.

Add Flavor

Add minced garlic and chopped rosemary to the skillet, cooking for an additional minute. Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches your desired doneness.

Finish

Remove the beef from the oven, baste with butter, cover loosely with foil, and let it rest for 10 minutes before slicing.

B.C. Halibut Preparation

Prepare the Halibut

While the beef is resting, prepare the halibut. Preheat a separate skillet over medium heat. In a small bowl, mix lemon juice, garlic powder, paprika, olive oil, salt, and black pepper.

Cook the Halibut

Coat the halibut fillets with the lemon mixture. Place the fillets in the skillet and cook for 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.

Garnish and Serve

Sprinkle chopped parsley over the halibut before serving. Serve alongside sliced beef tenderloin for a delightful dinner à la maison.
