Heat 5 gallons of water to about 165°F (74°C). Add the pale malt and carapils malt, and hold the temperature at around 150°F (65°C) for 60 minutes.

Mashing

After mashing, drain the wort from the grains and rinse the grains with another 2 gallons of hot water to extract more sugars.

Lautering

Bring the wort to a boil and add Hallertau hops. Boil for 60 minutes, adding Saaz hops in the last 15 minutes.

Boiling

Cool the wort rapidly to around 68°F (20°C) using a wort chiller or an ice bath.

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal the vessel with an airlock. Ferment at 50-55°F (10-13°C) for 2 weeks.

Fermentation

After fermentation, dissolve corn sugar in a small amount of water and add it to the beer for carbonation. Bottle the beer and cap them.

Bottling

Let the bottles condition at room temperature for 1-2 weeks before chilling and enjoying.
