Cooking Instructions

1

Prepare the Ingredients

Preheat your oven to 200°C (400°F). Clean the shiitake mushrooms and slice them. Mince the garlic cloves.

2

Sauté the Vegetables

In a skillet over medium heat, add the olive oil. Once heated, add the minced garlic and sauté for about 1 minute until fragrant. Add the sliced shiitake mushrooms and cook for 5-7 minutes until they are tender.

3

Add Spinach and Season

Add the spinach to the skillet and cook until wilted. Season with dried oregano, salt, and black pepper. If desired, stir in nutritional yeast for a cheesy flavor.

4

Assemble the Pitas

Cut the pita breads in half to create pockets. Stuff each pita half with the mushroom and spinach mixture. Add halved cherry tomatoes to each pita.

5

Bake the Pitas

Place the stuffed pitas on a baking sheet and bake in the preheated oven for about 10-12 minutes until the pitas are warm and slightly crispy.

6

Serve

Remove from the oven and serve immediately. Enjoy your vegan shiitake mushroom oven-baked pitas!
