Prepare the Duchess Potatoes

Boil the potatoes in salted water until tender. Drain and mash with butter, heavy cream, egg yolks, salt, and pepper. Pipe the mixture onto a baking sheet in desired shapes.

Sauté the Seafood

In a skillet, combine lobster, shrimp, and crab. Sauté in a bit of olive oil until just cooked through. Remove from heat and set aside.

Make the Creamy White Wine Sauce

In the same skillet, add minced garlic and sauté for 1 minute. Pour in white wine and reduce by half. Add heavy cream, salt, and pepper, and simmer until thickened. Stir in Parmesan and Swiss cheese until melted.

Assemble the Dish

Preheat your oven to 375°F (190°C). In a baking dish, layer the sautéed seafood, pour the creamy sauce over it, and top with the Duchess potatoes. Bake for 25 minutes or until golden.

Prepare the Seasonal Vegetables

Blanch asparagus, carrots, and bell peppers in salted boiling water for 2-3 minutes. Drain and set aside.

Plate the baked seafood with Duchess potatoes alongside the seasonal vegetables.
