Red Beans & Rice Recipe
Traditionally served in New Orleans on Mondays (Wash Day) but we think they are great every day! Served with Andouille Sausage and Jalapeno Cornbread

Cooking Instructions
Prepare the Beans
Soak the red beans overnight in water, then drain and rinse.
Cook the Sausage
In a large pot, slice the Andouille sausage and cook over medium heat until browned. Remove and set aside.
Combine Ingredients
Add the soaked beans, chicken broth, bay leaves, thyme, cayenne pepper, salt, and black pepper to the pot. Stir well.
Simmer
Bring to a boil, then reduce heat to low and simmer uncovered for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally.
Add Sausage
Stir in the cooked Andouille sausage and simmer for an additional 15 minutes.
Serve
Serve the red beans over cooked rice, garnished with sliced green onions.
