Make the Dark Roux

In a large heavy pot, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly until the mixture turns a dark brown color, about 20-30 minutes. Be careful not to burn it.

Cook the Sausage and Chicken

Add the Andouille sausage and chicken to the roux. Cook for about 5 minutes until the chicken is browned.

Add Vegetables

Stir in the onion, green bell pepper, celery, and garlic. Cook for another 5 minutes until the vegetables are softened.

Simmer the Gumbo

Add the diced tomatoes, chicken broth, bay leaves, Creole seasoning, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 45 minutes, stirring occasionally.

Serve

Remove bay leaves. Serve the gumbo over cooked white rice and garnish with sliced green onions and chopped parsley.
