Preparation of Brisket
Slow Roast the Brisket
Preheat your oven to 300°F (150°C). In a large roasting pan, combine the beef broth, chopped onion, minced garlic, Cajun seasoning, salt, and black pepper. Place the brisket in the pan and cover with foil. Roast for about 4 hours or until the meat is fork-tender. Remove from the oven and let it rest before shredding.

Prepare the Potato Chips
In a large bowl, toss the potato chips with olive oil and Cajun seasoning until evenly coated. Spread them out on a baking sheet. Bake in the oven at 350°F (175°C) for about 10 minutes or until they are slightly golden and crispy.

On a large serving platter, layer the spiced potato chips, followed by the shredded brisket, red beans, queso cheese, ghost pepper cheddar, jalapenos, diced tomatoes, and chopped green onions. Serve immediately and enjoy!
