Prepare the Shrimp

In a bowl, season the shrimp with salt, black pepper, garlic powder, and onion powder. Set aside.

Set Up Breading Station

In three separate bowls, place coconut flour in the first, beaten eggs in the second, and a mixture of shredded coconut and panko bread crumbs in the third.

Bread the Shrimp

Coat each shrimp first in the coconut flour, then dip into the egg, and finally coat with the coconut-panko mixture. Ensure each shrimp is well-coated.

Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat until hot.

Fry the Shrimp

Carefully add the breaded shrimp to the hot oil in batches. Fry for about 2-3 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Serve

Serve the fried shrimp with pineapple pepper jelly on the side, alongside fries and hushpuppies.
